The Good People At The Dandy Collection Know How to Party This Christmas

If you’ve read our stories behind the concepts launched by the good people at The Dandy Collection which range from Firangi Superstar to California Republic, you’d notice that the word happy is always mentioned. It could be used in the context of the heart and hype behind the food each of its head chefs puts into a menu or at its simplest, the emotion you get when you’re seated all the way till you sign off the bill.

In a Christmas context, The Dandy Collection already has its menus sorted and once again, it’s as happy as can be.c

Pictured Above: Available from 20th to 25th December, California Republic is serving everything from an intensely savoury Orange Tagliatelle with Lobster Tail & Bottarga ($64) to a classic Grilled Lamb Chop. Come 31st December is when their All That Glitters party is happening; Oysters on the Half Shell, Sea Urchin Chitarra with Uni Butter & Black Winter Truffles, as well as an MB9 Wagyu Flat Iron with Porcini Butter with First Seating Reservations (Bookings made before 6.45 pm) going at $168++ which includes a glass of Moët & Chandon on arrival and the second (Bookings made from 8:00 pm onwards) at $198++ which includes a glass of glass of Moët & Chandon to toast at midnight.

On 24th December, there will be a A Fat Prince Christmas ft. DJ Kaylova where a two hours free flow starts at $98++ and the beats include Deep House, Tech House, Funk and Disco. On 31st December, the “Midnight in the Middle East” party has DJ Valerie Foo spinning the hottest hits while Chef Simon is presenting a middle-eastern inspired menu which dishes ranging fromSakoshi Oysters with Caviar, Cozy Harbor Lobster Tail with Orange, Golden Beets and Brown Butter, and a Margaret River Rib Eye with Celeriac, Mint, Pul Biber and Kale. Prices start at $198++ for the first seating (5:30pm which includes a glass of champagne) and $198++ for the second at 8:00pm which also incudes a glass of champagne

Available from 19th to 25th December, Head Chef Raj Kumar serves up a variety of dishes like a Boston Lobster Goanese curry or Black Truffle Naan. As for the New Year’s Eve party titled “
Midnight in the Middle East“, the highlights of the five-course dinner menu includes Alaskan King Crab with Beetroot Poriyal, Kerala Roast Surf & Turf featuring Grilled Heirloom Cauliflower and Sea Asparagus, and USDA Prime Porterhouse and Maine Lobster.  The first seating (5.30-8:00pm) is priced at $148++ for a vegetarian menu and $198++ for a non-vegetarian one with the second (8.00pm onwards) going at $208++ and $238++ for the latter and former.

From 21st to 30th December, Chef Sean is whipping up exclusive dishes like Toro Tartare with Caviar, Sakemushi Steamed Hirame which comes with four sides including Mashed Potatoes, Wasabi Pepper Gravy, Spinach Salad with Tosazu and House Pickles and a Bucket of Quail Kaarage. On 31st December, their “EAT. DRINK. PARTY” has resident deejay DJ Tang spinning everything from nu-disco to R&B with an early bird communal menu starting at $120++ between 5.30-8.30pm and $98++ from 8.30pm till late.
