Usher in the New Year at Audace Bar & Restaurant, where a lavish evening of celebration and indulgence awaits. Together with lovely live jazz performances throughout the night (8pm to 11pm), diners will be treated to a six-course meal curated by Michelin-awarded executive chef Jérémy Gillon; they can even opt for a variety of free-flow house pour wines and canapes to accompany the scrumptious spread.
The menu for the night starts with the Jerusalem Artichoke served with sea urchin and seaweed; and Barramundi Ceviche with menthe sausage, lardo di colonnata, radish and anchovy dressing.
Diners will also be treated to the Steamed Crayfish and Shrimp with carrot juice and sureau. Mains include the Pan Seared Red Mullet served with grilled celture, sesame and mango syrup; and Grilled Smoked Prime Rib with roselle, hummus and mushroom. The six-course meal ends with a sweet and savoury Dark Chocolate Ganache with rice ice cream and black truffle dessert.

The celebratory meal starts off with freshly shucked Tsarskaya Oysters, whose slightly acidic note welcomes a side of jalapeño ponzu, salmon roe and pickled ginger flower. This is followed by a series of signature favourites: Potato and Truffle “Gratin” and Smoked Atlantic Mackerel.
The Spanish-style menu also offers a lush pairing involving a succulent Suckling Pig with mulled wine reduction and apple and rhubarb chutney, as well as the Festive Croqueta of roasted poulard, confit onion and aioli. Esquina ends the mouth-watering spread with a delectable serving of Homemade Monkey Shoulder Whiskey Cream.

The COMO Cuisine Christmas menu teases with an artful amuse-bouche, the Cavier doughnut, to kickoff the festive treat. That’s followed by a lighthearted bowl of sunchoke soup enhanced with mushroom and truffle oil, and crab salad garnished with celery, apple, grape, mint and mustard dressing — a perfect balance of savouriness to whet appetites.
The choice of mains comes with a selection of either Kingfish with tomato essence, olive, endive and basil, or Roasted Turkey Galantine with stone fruit, bread crumble and cinnamon jus. Those feasting in bigger groups can opt for sides to share: a choice of glazed heirloom carrots and hazelnuts, or brussels sprouts, sage and bacon.
To end off on a sweet note, the menu features a heavenly chocolate lava cake, infused with explosive rocks with a scoop of mint ice-cream on the side.
