This year, Whisky Journey reprises itself as a convention-exhibition format at Marina Bay Sands Expo and Convention Centre. With over 100 whiskies and expressions featured by more than 20 exhibitors, immerse yourself in the world of liquid gold from the world over, including unknown treasures waiting to be discovered. Men’s Folio caught up with the guys behind Sing Sing Whisky and Shinobu Whisky about their philosophies and whisky-making process, which make them interesting expressions for whisky lovers to try.

Shinobu Whisky

Crafted at the Shinobu distillery of Niigata Beer Co. in Japan, Shinobu Whisky is a fusion of local excellence and global vision. Founded by the innovative brewer Mr Usami Ken, the distillery aims to showcase the region’s “three white treasures” — snow, rice, and sake. Niigata’s pure water source, a product of winter snowfall, adds a unique touch to their creations. Another hallmark of Shinobu Whisky is the use of Japanese Mizunara oak to impart complex notes to the whiskies.

Shinobu whisky symbolises the Spirit of a Samurai. How does this translate into the brand’s approach toward the whisky-making process?
For us, “Spirit of Samurai” is the passion for making the best whisky in the world. By sharing this dream among our staff, we strive to make the best products without compromising the quality.

The three white treasures symbolise the pureness and delicate essence of Niigata, and they are also essential for making whisky.

What is the unique philosophy or approach that sets Shinobu whisky apart from other whisky brands?
What makes our whisky special is that you can feel the aroma of Mizunara oak. We can produce high-quality Mizunara whisky consistently because of our original pipeline.

Mizunara oak finish is one of the distinguishing factors of Shinobu whisky. How does this contribute to the final taste and aroma of the whisky?
Sweet and exotic aromas and flavours all come out of Mizunara oak.

Given that you are an independent whisky distiller, what percentage of the whisky-making process is traditional and what percentage is experimental/innovative/unorthodox?
We learned about the process of making whisky by ourselves, but other than that, we innovated our method through countless trials. That is why our process is completely different from other whisky. On top of that, we utilise the fermenting process of beer for making whisky. 

Which Shinobu whisky expression is a good entry point for people to experience the brand?
We would like you to try Shinobu blended whisky first because it’s very smooth to drink and suitable for people who have never tried whisky before.

We are super excited to release our 3-year-old whisky soon. It is exactly what we look forward to for a long time.

Sing sing Whisky

Originating in Singapore and meticulously crafted in Taiwan, Sing Sing Whisky is poised to captivate the global palate. Sing Sing, otherwise known as 新星, which translates as “New Star,” reflects the brand’s ambitious vision as a new player from Singapore and finding its artistry in Taiwan. Sing Sing Whisky unveils a fresh visual identity, embodying attributes of premium quality, elegance, taste, and sophistication. With each sip, Sing Sing Whisky invites enthusiasts on a journey of refined indulgence as it seeks to mark its presence as a global delight.

Premium, elegant, tasteful, sophisticated, yet attainable.

Sing Sing’s literal translation is “New Star”. What was the inspiration behind the brand’s name?
The Chinese characters 新星 that makeup Sing Sing Whisky represent the coming together of both the old and new. The goal is to create a whisky brand borne of Singapore that is new to the whisky world and steeped in tradition and heritage.

We aspire to introduce an expanding audience to the world of whisky through Sing Sing Whisky, fostering a global community of whisky enthusiasts. Our objective is to establish Sing Sing Whisky as a beloved and recognised brand worldwide, thereby elevating Singapore’s presence on the global whisky map.

While planning for the brand, were there other whisky distillers that you benchmark against and looked up to in terms of quality and taste?
As avid whisky enthusiasts, we embarked on a global journey of sampling an extensive array of whiskies. Our quest led us to curate a palate that resonates with our discerning taste, with the conviction that it would also appeal to the majority. This meticulous selection aligns with our mission to introduce more consumers to the captivating world of whisky.

Discover Shinobu Whisky and Sing Sing Whisky at Whisky JourneyGiven that you are an independent whisky distiller, what percentage of the whisky-making process is traditional, and what percentage is experimental, innovative, or unorthodox?
While the whisky-making process in Taiwan adheres to tradition, distinct from Scotland’s methods, it shares fundamental stages such as malting, mashing, fermentation, and distillation. Noteworthy innovations, particularly in the maturation stage, contribute to shaping the unique taste profile of our whisky. An example of this innovation involves placing barrels in a location surrounded by orchids for a specific duration, imparting a delightful floral nose profile to the whisky.

Sing Sing Whisky is a Singapore brand crafted in Taiwan. Which region of Taiwan is Sing Sing distilled and aged in? And what are some unique features of the ingredients used?
The distillation and ageing of our whisky take place in Kaohsiung, where locally sourced ingredients, including grains and water, distinguish our process. What truly sets us apart is the region’s unique climate, contributing to an angel’s share of approximately 8% each year. Additionally, as previously discussed, our innovation in maturation techniques further enhances the distinct character and exceptional quality of our whisky.

Kavalan is perhaps the most established Taiwanese whisky distiller. Does their reputation help push the crafted in Taiwan tag for Sing Sing whisky?
While Kavalan has successfully raised awareness for Taiwanese whiskies, it’s important to note that the palate of Sing Sing Whisky differs significantly. Sing Sing Whisky distinguishes itself with a palate that is truly unique and distinct. Our commitment to crafting an individualised flavour profile sets us apart in the global whisky landscape.

Currently, 3 Sing Sing whisky expressions are available (12, 15 & 18 years). Which of these best captures the essence of the brand?
We believe each expression is a distinctive and authentic representation of Sing Sing Whisky. While all three expressions are crafted to be palate-friendly, they each possess their distinct nose and complexities, catering to diverse tastes across the global consumer base. If you want to embark on a Sing Sing Whisky journey, we recommend starting with the 15-year single malt for an exceptional experience.
