I haven’t really stopped to reflect on this until now, but so much of my life has passed through them. I wouldn’t be able to do the work I love without them, so if I could say something to them, it would be: thank you. Thank you for the memorised movements — stirring, shaking, pouring and serving — I don’t think about any more. My work is built on repetition, so thank you for your endurance. Without it, I wouldn’t have the precision or speed I rely on, and I wouldn’t be able to do my job the way it deserves to be done. Thank you for being the connection between the ideas in my head and the drinks I get to serve every night.
