A Summer Menu From Lewin Terrace

  • By Shelton Chang

Like fashion, food changes with the season – season-specific dishes arise due to their ingredients’ availability. Japanese-French fine dining restaurant Lewin Terrace unveils their new seasonal menu for the Summer of 2017, bringing in bubbling Japanese matsuri and iridescent fireworks to the sunny island of Singapore through their cuisine. Lewin Terrace is known for their expertise in balancing clean, simple Japanese flavours with rich French cuisine, so expect to see inventive creations from Chef Keisuke Matsumoto and Chef de Cuisine Hiroyuki Shinkai. The new exquisite 5-course and 7-course menus reflect Lewin Terrace’s produce-driven approach to food, featuring the best bounties that the season has to offer.

Some of the highlights include a sake-steamed abalone tempura that has irresistibly sweet and tender flesh (pictured top), succulent Miyazaki wagyu that’s roasted and then smoked for a perfect crust – from the 7-course Wakon Yosai menu designed by Chef Keisuke Matsumoto. From the 5-course Sho-mi Summer menu, Chef de Cuisine Hiroyuki Shinkai displays his minimalist approach to technique-driven dishes in the Kadayif: angel prawn enrobed in a finely shredded filo pastry, and poised elegantly atop a bed of capsicum, celery, and zucchini.

Lewin Terrace’s summer menu will be available until 31 August.
