The Gastronomy Journey by Dom Pérignon

From 23rd July to 30th December 2015, eight of Singapore’s finest restaurants will be embarking on Dom Pérignon’s first Gastronomy Journey to celebrate the launch of Dom Pérignon Vintage 2005, where diners will be taken on a culinary experience that illustrate the intense and vibrant facets of the champagne.

The year 2005 was full of contrasts. The weather was mostly warm, with little rain. A heatwave in August was followed by cool, rainy weather in September, tempering our initial enthusiasm. In the end, a drastic selection in the vineyard ensured a limited volume of exceptional quality, with a never-before-seen aromatic maturity.

The wine’s remarkably rich bouquet reveals intense notes of praline and coriander before transitioning structured and dense palate, characterised by an intriguingly spicy and flowery finish.

Due to the limited production linked to the challenging nature of the 2005 harvest, access to the Dom Pérignon Vintage 2005 in Singapore has been carefully curated and only select partners including these participating restaurants are offered this exceptional vintage.

BACCHANALIA Chef Ivan Brehm

Chef Ivan Brehm’s menu is a seamless blend of existing dishes tweaked and adjusted to better complement the Dom Pérignon Vintage 2005 and presented in plates designed exclusively with  the champagne in mind. The menu showcases the strength and finesse of the champagne through an array of dishes such as salads, iwashi and chicken. The highlight of the menu has to be the Scallop and Rose Ceviche dish that makes use of the champagne’s versatile ability to withstand and harmonise well with spice, strong umami, rich textures and floral notes.

BEDROCK BAR & GRILL Chef Isaac Tan

Chef Isaac Tan makes use of the restaurant’s signature wood-grilled meat cuts, smoked hot or cold to pair with the Dom Pérignon Vintage 2005. Highlights include the sweet and savoury Hokkaido scallops, lobster broth, confit potato that blends perfectly with the refreshing finish of the champagne and Eye of Ribeye, charred scallion, whisky mustard – a bold and classic taste of woodfire grilled grass-fed beef that offers a different take on the vintage.

DOLCE VITA Chef Omar Bernardi

Dolce Vita’s unique modern twist on the alluring flavours of authentic Italian cuisine, featuring the freshest of produce and the finest seasonal ingredients pairs especially well with the floral aspects of the Dom Pérignon Vintage 2005. The scallop carpaccio, is delicate dish. Natural sweetness of the scallop, combines with savouriness of the caviar and refreshing notes of the rhubarb creates a phenomenal experience. Also look out for the Gratinated Maine Lobster, cauliflower purée, sun-dried tomatoes, onion, lobster reduction, which is an intense dish with sweetness of lobster and savouriness of the dried tomato crunchness of the onion that is lifted by the richness of the Dom Pérignon 2005.

FAT COW Chef Fukashi Adachi

The light, crisp texture of the Dom Pérignon Vintage 2005 complements the more delicate elements of the menu, such as the Tai and the Carabineros prawn. The vintage’s minerality lends refreshment to the richer components of the menu. The notes of spice and coriander also stand up nicely to the pepper and smoke of the tataki and the charcoal and ginger in the Wagyu.

GUNTHERS Chef Gunther Hubrechsen

Modern French Cuisine takes centre stage in this fine dining restaurant which was opened by award winning chef Gunther Hubrechsen. His gift lies in his ability to reinterpret classic dishes and flavours, breathing new life into them in terms of both taste and presentation. Menu is not published as chef would like his guests to be surprised when they dine. Menu will also change depending on seasonality of ingredients. But be sure to look out for the signature dish of cold angel hair pasta with Oscietra caviar, an intensely-flavoured chilled angel hair pasta tossed with chives and truffle oil that pairs well with the subtle floral notes of the Dom Pérignon Vintage 2005.

At Kaiseki Yoshiyuki, the freshest seasonal ingredients are shipped in from Kyoto and Tsukiji Market, creating a gastronomic experience that transports guests to the finest restaurants of Kyotofrom the heart of Singapore. Kaiseki Yoshiyuki’s focus on seasonality creates a unique pairing with Dom Perignon, with each nuance of the season unveiling a different feature and unleashing the complexity of each vintage. Menu will change based on seasonality and availability of ingredients.

ONE-NINETY WOOD-FIRED STEAKS AND SEAFOOD Chef Giovanni Speciale

Led by Executive Chef Giovanni Speciale, he brings more than two decades of expertise in succulent cuts of steaks and seafood honed across extensive experience in Four Seasons properties. Highlights from this menu include the Alaskan king crab and Ossetra Caviar that boost counterpoint to the vibrant richness of the Dom Perignon champagne and Pan Seared Duck Foie Gras, Roasted Pineapple and Coconut Essence tantalizes with piquant symphony, while Slow- Roasted Milk-Fed Veal Loin adds a tender distinction with the saffron risotto and shaved summer truffle balancing perfectly with the zesty bubbly.

YAN TING Chef Tony Wun Shun Kong

To complement the pure and rare Dom Pérignon Vintage 2005, Chef Wun has crafted the menu with a focus on seafood. The vintage has warm tasty notes with a flowery yet spicy finish, which pairs effortlessly with a range of seafood. The menu highlights include the trio of appetisers comprising shrimps and scallops, a delectable dish of oven-baked sea perch fillet with crisp skin and tender meat, and the Pipa-style beancurd which is deep fried for a crusty outer layer and accompanied with flavoursome crab meat sauce.
