It’s Saturday night and as one slowly wind down slowly from World Party Day on 27 March, consider these tipples that add extra fun to the night without losing the booze. 

The Old Man Singapore 

Located on Keong Saik Road, The Old Man Singapore is exactly what every literary nerd thinks it is – a homage to iconic American novelist Ernest Hemingway’s Pulitzer Prize-winning fictional work, The Old Man and the Sea. With each of its nine experimental cocktails inspired by Hemingway’s libations of choice, they are also titled after his classic novels. Just like the relationship between Henry and Catherine, “Farewell to Arms” is a progressive love affair made from butter fat-washed gin, vermouth and topped with onion and nori dust, while “Islands In The Stream”  is a refreshing combination of clarified pink grapefruit and salted gin, likening to the bravery of protagonist Thomas Hudson.

Smoke & Mirrors 
 
With new head bartender, Jorge Conde, Smoke & Mirror’s “Illusion of Flavours” is a curation of cocktails dedicated to Jorge’s love for the arts, specifically the combination of spirits and magical illusions, while pushing the boundaries of expectations with modern techniques. Inspired by The Letters of Vincent van Gogh, agave-based The Heart of Vincent weaves savoury notes with sea salt, quinine and pickled purslane. Much like Andy Warhol’s iconic piece, Peel and See is a unique gin-based combination fused with banana, miso and olive oil that go through a multi-step process of sous vide, dehydration and fat-washing before being served with an additional dash of olive oil for garnish.

Three Buns Quayside
 
If one is looking for casual cocktail pairing, look no further than the leafy enclaves of Three Buns. For the initiated, their succulent burgers are not the only things in this quirky establishment worth paying for. Made from an energising combination of rum, coconut water and coconut liqueur, “Let’s Escape” is a beautiful blend of alcohol and tropical fruits guaranteed to take the mind off the scorching tropical heat. 
 
Located at 60 Robertson Quay, take a respite from the heat with Three Buns. 

Publico Ristorante

Suitable for cocktail lovers new to the scene, Chamomile Sour at Publico Ristorante is subtle-tasting and a quaffable crowd pleaser. A spin on the classic Whisky Sour, this well-executed blend made by head mixologist, Woodrow Goh incorporates three main ingredients -whisky, chamomile syrup and egg white, best served with a side of pizza for an uplifting aperitivo.
